Vegan Mac and Cheese Hot Dog with ‘Bacon’ Bits. Made perfect with French’s mustard


3 tsps French’s mustard 
Vegan Bacon
Agave Nectar or Vegan Maple Syrup
Vegan Hot Dogs Sausage
Hot Dog Buns

For the Mac and Cheese

1- 2 cup butternut squash 2 cups peeled and diced
1 Potato peeled and cubed
2 Cups of macaroni
1 Onion thinly sliced to caramelize
1 tablespoon (14 g) vegan butter
3/4 cup (180 ml) unsweetened plain vegan Yogurt
1/4 cup (20 g) nutritional yeast, or more to taste
½ cup of grated vegan cheese
1 Tsp garlic powder to taste
1 Tsp white pepper
2 Tsp smoked paprika to taste
¾ cup of vegetable broth
1/2 to 3/4 tsp fine sea salt, to taste
Freshly ground black pepper, to taste

Preparation Method

  • In a pot add 2 – 4 cups of water, add the butternut squash and potato. Bring to a boil, reduce heat to medium-low and cook at a gentle boil for 20 minutes
  • In the pot add a teaspoon of garlic powder, paprika powder, white and black pepper
  • Next, cook the macaroni according to package directions. Add a bit of olive oil to avoid pasta from sticking
  • Now for the caramelized onions. Heat oil in a large frying pan over low heat. Add the onions and a good pinch of salt and cook very slowly for 15-20 minutes, occasionally stirring to prevent them from catching. Add a tablespoon of water to avoid sticking. Cook onion over low heat for a further 5-10 minutes, occasionally stirring, until sticky and caramelized. Remove from the pan and place to the side
  • In a pot on medium heat add 1 tsp of vegan butter. Next add your cooked butternut, potato, yoghurt, nutritional yeast, grated cheese, garlic, paprika and vegetable broth and stir occasionally
  • Next, add your cheese sauce mixture into a blender, and blend until smooth and creamy
  • Add your cheese sauce and caramelized onion into your cooked macaroni, and mix, mix, mix!
  • For the bacon bits, coat one side with agave nectar, then fry bacon until crispy on both sides. Once cooked, remove from the pan, and dice into little pieces to sprinkle on top as garnish
  • Cook your hot dogs according to package directions
  • Now you're ready to plate your dish and top your Mac and Cheese hot dog with a generous drizzle of French’s!
