Quinoa Salad with Spicy Honey Lime Dressing

45 ml French's® Classic Yellow® Sweet Mustard
45 ml lime juice
45 ml honey
15 ml fresh cilantro
5 ml ground cumin
2 ml salt
500 g cooked quinoa
1 avocado, peeled and diced
240 g black beans, drained and rinsed
240 g halved grape tomatoes
3 green onions, chopped
50 g toasted pumpkin seeds

Preparation Method

  • Combine Mustard, lime juice, honey, cilantro, cumin and salt in large bowl.
  • Add quinoa, avocado, black beans, tomatoes and green onions and toss until evenly coated.
  • Sprinkle with pumpkin seeds.
