2 bagels, split
1 tbsp. French’s® Classic Yellow® Mustard
1 tsp. olive oil
1 tbsp. maple syrup
4 rashers back bacon
Handful of rocket
1 avocado, peeled, stoned and roughly mashed
- Preheat the grill to medium, toast the bagel bases and spread with half of the French’s® Classic Yellow® Mustard.
- Heat a non-stick frying pan with the oil, add the bagel tops and crack an egg into each – it’s easier to crack the eggs into a ramekin first. Cook over a medium heat for around 10 minutes until the egg white has just set – covering the pan helps to cook the top part.
- Combine the rest of the mustard with the maple syrup and brush over the bacon. Grill for 3-4 minutes turning occasionally until cooked to your liking. Top the bagel bases with some rocket, bacon and avocado then carefully slide the eggy tops from the pan onto the bases. Season with some black pepper and serve.
