Pulled Jackfruit Burger

Ingredients:
1 Southern slaw seasoning
1 Carolina chicken seasoning
1 Sachet French’s classic yellow mustard

Jackfruit:
2 x 410g Tin of jackfruit (210g drained weight)
75ml Water
1Tbsp Extra virgin olive oil

Slaw:
100g Red cabbage, finely shredded
100g White cabbage, finely shredded
1 Carrot, peeled and grated
2 Tbsp Mayonnaise

Other:
4 Burger buns, sliced in half
2 Tbsp Mayonnaise
1 Little Gem lettuce

Preparation Method

  • Pre-heat the oven to 200 degrees C Grill/Fan.
  • Drain the jackfruit and place in a deep roasting tray lined with kitchen foil.
  • Mix the jackfruit with the oil, water and Carolina Seasoning. Place in your pre-heated oven for 30 minutes, (stir and add more water if needed half way through cooking) until caramelised and sticky.
  • While the jackfruit is cooking, mix your slaw ingredients in a medium bowl with the Southern Slaw Seasoning.
  • Once your jackfruit is cooked, pull with two forks and mix in the French’s mustard until combined, set aside.
  • In a dry frying pan, char your burger buns.
  • To serve, layer your mayonnaise, lettuce and pulled jackfruit on the bun base, then slaw and top with the bun lid. Enjoy!

Cooks Tip- if you don’t want the red cabbage colour to run, rinse in cold water first before adding to the white cabbage.
