Loaded Onion Rings with French's Louisiana Hot & Spicy BBQ Sauce

INGREDIENTS
2 red onions, sliced into ½ cm rings
100g flour
1 tsp. baking powder
125ml lager or light ale
1 tbsp.
French’s® Louisiana Hot & Spicy BBQ Sauce, plus extra to serve
Oil for deep fat frying

For the topping;
50g grated mozzarella
50g grated Cheddar
2 tbsp.
French’s® Louisiana Hot & Spicy BBQ Sauce
4 peppadew peppers, sliced
Handful chopped parsley

PREPARATION METHOD

  • Sift the flour into a bowl, add the onion rings and toss them around to coat, remove and set aside. Add the baking powder and stir through then whisk in the lager or ale and French’s® Louisiana Hot & Spicy BBQ Sauce until smooth.
  • Heat the oil to 190C. Dip the onion rings into the batter and carefully add to the oil. Cook the rings in batches – 5-6 is probably all that will fit – for 1-2 minutes until golden and crisp, flipping them over in the oil at least once to brown both sides. Drain on kitchen paper. Continue cooking all the rings.
  • Preheat the grill to medium. Pile the onion rings into an ovenproof dish. Combine the grated cheeses with the French’s® Louisiana Hot & Spicy BBQ Sauce and spoon on top of the rings. Grill for 2-3 minutes until the cheese is bubbling. Scatter over the peppadew and parsley before serving.
